A pioneer in the whisky category, Death’s Door White Whisky is made up of a mash bill of an 80:20 ratio of organic Washington Island Wheat to organic malted barley from Chilton, Wisconsin. The spirit is then double-distilled up to 160 proof (80% abv), rested in stainless steel and finished in uncharred Minnesota oak barrels to help bring the “white whisky” together and to meld this unique spirits’ flavors. The bouquet is one part “South of the Border”: artisanal cachaça, tequila; and one part “Eastern”: sweet potato shochu/soju and earthy sake. Yet, the palate is unmistakably whisky: a smooth double-distilled varietal with vanilla, chocolate covered raisin, and dark cherry flavors. |

Fans of Washington's Dry Fly Distillery will be very happy when August rolls around. That's when the craft distillery, famed for its simple and clean vodka and crisp gin will be releasing their first Washington Wheat Whiskey. Since Dry Fly launched back in 2007 they've been promising loyal fans a whiskey. The spirit, made with local grains, spent the last two years maturing in charred whiskey barrels. The magic day has finally arrived but retail customers are going to have to act fast. On August 7 stores listed on the Dry Fly website will begin selling whatever product remains after they are done selling to restaurants and bars. The distillery will also sell around 20 cases but caution that they expect to sell out in hours even with a two bottle per person limit.

Nose:
Trademark Dickel flavours with toasted oak and lush tobacco sweetness. Here lifted to another level thanks to some marvellously fresh oranges.
Palate:
Exceptionally good mouthfeel. Traces of toast and cocoa mix effortlessly with smooth rye of world class quality.
Finish:
Sharp oranges leap out from the dark closely followed by cocoa and spicy menthol-fresh oak. All flavours get entangled into each other in harmonious fashion.
Comment:
Clearly, a lot of care and thought has gone into this whisky. Perhaps not so conquering in nature as the classic No. 12, but for sheer sophistication and hedonism you can´t beat it. Similar in some ways to the 10yo Barrel Reserve that made the rounds during the 90´s but this is much better.

It had been 27 years since the Jack Daniel Distillery had entered a Gold Medal competition, and much had happened with the Distillery during that time. Within two years of winning the 1954 Star of Excellence in Brussels, Belgium, Jack Daniel’s had experienced a 100 percent sales increase as well as a change in ownership. Lem Motlow’s four sons- Reagor, Robert, Hap and Conner – sold the Distillery to Brown-Forman Corporation in 1956. Jack Daniel’s continues to experience tremendous growth, with volume increasing tenfold by the end of the 1970’s. Our Tennessee Whiskey was being sold throughout the world and had developed a loyal and diverse following, from bankers to bikers, from movie stars to rock stars. Despite all the changes, however, there was nothing different about our commitment to making our whiskey. And we thought it was important to demonstrate that commitment by entering the Brussels-based Monde Section Institut Pour Les Selections De La Qualité in 1981. The judges awarded Jack Daniel’s Tennessee Whiskey the institution’s top medal, the “Grand Gold Medal with Palm Leaves,” during ceremonies held that year in Amsterdam, The Netherlands. Another quarter of a century has passed, and we still adhere to Mr. Jack’s philosophy in making sure our whiskey is of the highest quality: “Every day we make it, we’ll make it the best we can.” |

| McCarthy's Oregon Single Malt Whiskey |
|
|
McCarthy's Oregon Single Malt Whiskey is of the Islay tradition of Scotch whisky. Of well-known single malts from Scotland, it resembles the Lagavulin whisky. It is very peat-y. Made from peat-malted barley brought in from Scotland, our whiskey would be a single malt Scotch if Oregon were Scotland. Widmer Brothers ferments the peat-malted barley into a "wash" or unhopped beer. Using the unfinished wash allows us to get all the flavor and character of the malt when we distill. We distill in our Holstein pot stills using one pass distillation, but making a small "heads" cut and a fairly large "tails" cut and putting about 4 liters of tails into the next still run. The proof at time of distillation is about 150 (75%). Then we reduce in proof and barrel-age the rough distillate in old sherry casks.
All the Oregon Single Malt now spends some time in barrels made from air-dried Oregon Oak. The present bottling is only 3 years old but we think it is remarkably smooth for such a young whiskey. The result is a smooth, peat-y whiskey with a surprisingly clean finish. Production is very limited because what we put in the barrel doesn't come out for years.
