Our heritage in Tequila began more than 250 years ago. Our Spanish ancestors immigrated to Mexico in the early 18th Century and co-founded the town of Arandas in 1761. Long considered the epicenter of artisanal highlands Tequila production, Arandas is home to our family-owned Tequila distillery.

For six generations, we have taken great care in preserving the invaluable resources of this important region, practicing sustainable farming and taking a long-range approach to growing quality agave. As part of our family's commitment to preserving the ecology of the Los Altos Highlands region, engineers at our distillery invented a system to recycle the vinazas – organic residue from careful distillation – generated through Tequila production . We reuse the vinazas to fertilize the agave fields with organic material , yeast and sugar. For 250 years, our commitment to the land has never wavered.

We take our time in the distillery, too, slow roasting our agave and giving it a lengthy fermentation to preserve its delicate flavors. The result is a refined spirit with the pure, authentic taste of the mythical blue agave plant.

Mezcal has long been something that most Americans only knew as the stuff bottled with a worm and generally tasted on a dare during spring break. (Not to mention the confusion with that other Mexican spirit.) Fortunately, mezcal’s image has recently been given an extreme makeover and small-batch bottlings are becoming more widely available on this side of the border.

First: All tequila is mezcal, but not all mezcal is tequila. While premium tequila is made from blue agave, mezcal can be made from other varieties of the plant. Second: Tequila distillers generally steam the agave before fermentation, while for mezcal the agave is usually slow-roasted in oven-like pits lined with hot rocks. This process gives the spirit its signature earthy and smoky dimension.
