Strawberry Senjo Martini
2 oz Le Tourment Vert
1.5 oz Simple Syrup
1/3 oz Japanese yuzu juice
1 large ripe strawberry
Glass: chilled martini glass
In a mixing glass, muddle the strawberry and the yuzu together.
Add ice, Le Tourment Vert absinthe and simple syrup.
Shake well and strain into a chilled martini glass.
Garnish with a slice of fresh strawberry.

4 lemon wedges

Description:
Maraschino Luxardo is a classic. The typical straw coated bottle is by now a true icon on the mass consumption scenario. It is one of the very few liqueurs in the world produced by distillation. It is obtained from the marasca, a sour cherry variety exclusively cultivated by Luxardo. The distillate is allowed to mature for two years in Finnish ash vats (this wood does not lend its colour even after many years of maturing), and is then diluted and sugared.
Characteristics:
Colour: clear.
Perfume: typical of marasca distillate, with an excellent intense aroma, fine and well amalgamated, without any aggressive note.
Taste: smooth but sharp, a sweet liqueur unusual for the punch of the distillate, which can be clearly perceived in spite of the moderate alcohol content. A rounded taste and a surprisingly persistent aroma.

COLOR BEFORE WATER 8/10
Clear green with a slight blue-ish tinge. Very similar to Duplais Balance, and I suspect the chlorophyll of the natural herbs used has been enhanced with some sort of additive, as it just doesn’t look quite like the colour of any absinthe I’ve seen that was only coloured with plants.
LOUCHE ACTION 8/10
Not turbulent or concentrated enough, but certainly good, and the swirling oil trails as water is dripped are pretty.
COLOR AFTER WATER 8/10
While it is green, it lacks the yellow tinge that other naturally coloured absinthes have which make the post-louche colour pearlescent and milky.
AROMA 23/30
Not a whole lot there, but there’s not any sharp alcohol heat either. The aroma that is there seems to be Coriander and Wormwood, and the Coriander/Wormwood combo becomes fairly assertive when louched. It’s just shy of being clean, there is a subtle toasty aroma reminiscent of tails that was left behind in my measuring cylinder after the absinthe was poured out of it, but it isn’t enough to translate to the louched aroma.
MOUTH-FEEL 8/10
Not thick and creamy, a little thin, but still relatively smooth, with little alcohol bite. There is a moderate spicy kick from the coriander which keeps it interesting.
TASTE 15/20
This Absinthe is VERY similar to Duplais Balance in just about every respect, except the wormwood is more prominent and the anise is a tad weaker. The coriander and wormwood combine to create an interesting woody/pepper/minty taste. The wormwood used is of good quality, though not of the very distinct Pontarlier Wormwood caliber found in L’Artisinale and the Jades. There’s a little fennel in the aftertaste, though it’s a tad camphorous and not gorgeously rich like the fennel in Jade Edouard and L’Artisinale. The wormwood in the aftertaste carries on for quite some time, and is the strong point of this Absinthe. The weak point is that, with the exception of the Wormwood and Coriander, the other flavours are more suggested than concentrated.
OVERALL IMPRESSION 8/10
This is a good absinthe. The drawbacks are the blue-ish tinged colour which looks slightly artificial, not being 100% clean, and the flavour not being as saturated into the drink as the best absinthes. I’d rank it just slightly above Lucid, as the wormwood is more obvious, though in terms of overall quality they’re fairly similar, with Lucid having the edge in the Fennel and Anise departments. It’s not a top shelf product that a dedicated absinthe drinker would spend a lot of time enjoying, but will likely satisfy most drinkers. Obviously the goofiness of the 66.6% alcohol content and the Manson association have a lot to do with the origins of this absinthe, but thankfully what’s in the bottle has good wormwood and is drinkable.

2 shots Mekhong
1 ½ shots fresh squeezed lime juice
3 bar spoons sugar
Finger pinch of fresh mint leaves
3 thumbnail size pieces of fresh ginger root
Club soda
Muddle ginger, mint and sugar in a Collins glass. Add Mekhong and lime juice. Add ice and cover with a shaker tin. Shake briefly and vigorously. Top off with club soda and a dash of Bitters. Serve long with a straw. Based on the Mojito.

Why we make it
In the late 80's. Alessandro Francoli decided that traditional sambuca with its harsh, burning aftertaste was no friend of the drinker. So he set about making one which was smoother, tastier, with a lighter flavour and above all, not a throat arsonist.
By looking at the usual recipes and playing with the ingredients a bit, and then adding some significant touches of his own - not least using elderberry skins to give a unique, rich black colour - Opal Nera, the original black sambuca, was born.
How we make it
Opal Nera is a blend of various distilled ingredients which we prepare from scratch, using fresh products (yes, that's right, rather than siphon from huge tanks of various flavourings, we actually take stuff and make distillates from it - innovative isn't it?) So we blend distillates of green anise, star anise, elderflowers, elderberries, coriander and lemon peel (along with a few secret little treats) with neutral alcohol from beet, for a more natural sweetness. And for a final flourish, we infuse the whole thing with elderberry skins to give Opal Nera its distinctive, rich purple-black colour. The result is what we like to call "damn tasty".

The bottle is elegant and I when I occasionally drink this I keep them and refill the bottles for my own batches. The color has a tinge of green but overall it’s a milky white and it’s the only commercial brand I’ve tested that looks milky white straight from the freezer.
The aroma smells like chemicals, sort of like Elmer’s glue. The flavor is decidedly gentle, both compared to other commercial brands and to my own batches. This is no doubt at least partially due to the fact that it’s the weakest of the brands I reviewed at 26% alcohol (52 proof). The lemon flavor is fairly subtle compared to most, the character of the sugar is just as prominent.
Some of the chemicals also make it to the flavor and remind me of a hospital for some reason. I wouldn’t call this great limoncello but it has a much more easily likable flavor than most.
